Slimming World Roast Potatoes – Using stock / oxo cubes

slimming-world-roast-potatoes-300x152.pngThere’s a lot of top secrets in the #SlimmingWorld community which we hear about, from the famous Syn Free Chips recipe, to the Pasta Quiche, but making Slimming World Roast Potatoes with a stock cube (or oxo) is something else!

It seems really simple, just get some roasties on the go and add a stock cube to the roasting tray as they go into the oven.

And it really is that simple.

Method

  1. Par boil your roast potatoes as normal and then once ready, drain and return to the pan. We use Maris Pipers.
  2. Roughen them up by placing the lid on the pan and shake around. Then boil enough hot water and add to a stock cube (We used a chicken oxo stock cube, and around 500ml, but it’s up to you depending on the amount you’re using), then place the roast potatoes into the baking tray.
  3. Add the hot stock until the potatoes are half way covered and spray with fry light.
  4. Add to the oven and wait.

And that’s it – fantastic tasting roast potatoes, Slimming World style, and with a simple addition of a stock cube! (And did we mentioned they’re totally syn free?!)

    loved these pots even my hubby said ‘these are nice potatoes’ then i told him they were slimming world!
