A lovely Spanish dish – memories of the Mediterranean flow back – however if you’ve never tried paella before, this is a nice and simple recipe which tastes great with friends or even as a quick mid week meal. It takes less than 30 minutes from start to serving.

 

Slimming World Paella

Syns per serving – Extra Easy: 3.5 (chorizo)

Serves 4

Ingredients

400g chicken, cut into small pieces

1 tsp paprika

200g chorizo, diced

2 garlic cloves, crushed

6 spring onions, roughly chopped

1 tsp tumeric

200g Spanish paella rice

1 red pepper, diced

650ml hot vegetable stock

100g frozen peas

Method

Place the chicken and the paprika in a bowl and mix until fully covered

Spray a deep pan with Frylight and heat to medium. add the chicken, chorizo and garlic. Cook until the chorizo has coloured and the chicken has begun to brown.

Add the spring onions, tumeric, red pepper and paella rice. Stir and heat for about 3 minutes until the rice is opaque.

Add the hot stock. Stir the mixture gently and then leave to simmer for 10 minutes, until the rice is half cooked.

Add the peas and then heat for a further 10 minutes until the rice is fluffy and the chicken is fully cooked.

Serve with black pepper.

 

Note: You can add fish to the recipe (One of us doesn’t like fish) – simply add some king prawns when you add the peas to the above recipe.
