Slimming World Beef Keema and Rice

Keema is a traditional dish from Asia which is basically made with rice and mince. This recipe has extra speed foods such as carrot included – as well as plenty of free curry spices to give it an authentic taste.
Also, it’s a one-pot option, which if you’re familiar with other recipes on our website, we’re sold!
Ingredients
- 150g basmati rice
- 1 onion, finely sliced
- 200g carrots
- 1 tbsp curry powder (medium recommended, your choice!)
- 10g root ginger, grated
- 300g extra lean (5%) fat beef mince
- 1 garlic clove, grated
- 1 beef stock cube
- 2 tbsp tomato paste
- 1 tbsp sweetener
- 400ml boiling water
- Fry light
- Fresh coriander and 1 lime to garnish (if you’d like)
Directions
- Spry a large pan with Fry light over a medium heat – when hot add the onions and cook with a sprinkling of the sweetener to add to the flavour. Cook for 3-4 minutes, until softened
- Add the beef mince to the pan and cook for a further 4 minutes. Use a spatula to break up the mince and mix together with the onion until browned
- Slice the carrots into small pieces. Add them to the pan with the grated ginger and grated garlic – cook for 2 minutes
- Break the stock cube and sprinkle into the pan. Season well, and add the tomato paste and the curry powder. Mix really well to coat everything
- Add the rice and stir to coat everything in the pan!
- Add the water (400ml) and bring to the boil. Once boiling, reduce to a simmer and cover with a lid. Cook for 10-15 minutes or until the rice has cooked through and the water has absorbed. Stir regularly, and if not cooked, add additional water to the rice.
- Serve into large bowls, and garnish with the fresh coriander and limes (wedges)
